Gâteau Truffe au Chocolat

A delicious chocolate cake, described somewhere between a luscious brownie and a light, not super-sweet cake!

Ingredients
  

  • 8 oz. Dark Chocolate cut into large pieces
  • 3/4 cup Unsalted butter cut into cubes
  • 1 cup Cassonade sugar (brown cane sugar)
  • 1/4 tsp Salt
  • 1/4 cup All purpose flour
  • 1 tbsp Cocoa
  • 5 eggs

Instructions
 

  • Place the oven rack in the center of the oven. Preheat the oven to 350°.
    Prepare a 20cm (8 1/2 in) round pan by cutting out baking paper to fit the bottom of the pan and then proceeding to butter the bottom of the pan and the sides of the pan before laying the baking paper down to fit the inside of the pan. (Hardest part of the recipe!)
    Melt the chocolate pieces and the butter pieces together in the microwave using a microwave-safe glass bowl.
    (The official and proper way to melt chocolate is to use the bain-marie method. This requires a pan of boiling water placed on the stove, with another pan placed over the boiling water. You then place the chocolate and the butter in the second pan to melt the chocolate properly. This method allows the chocolate to melt safely without causing a burning of the chocolate. However, I tend to go the more convenient and faster route of using the microwave. My only word of caution is to watch the chocolate carefully in the microwave so that it doesn't burn.)
    Stir the melted chocolate and butter well. Allow to the mixture to cool.
    In another bowl place the eggs, sugar and salt. Whisk just until the mixture is combined.
    Add the flour to the eggs, sugar and salt. Add the melted chocolate and butter mixture and stir all the ingredients together well.
    Place the batter into the prepared pan.
    Bake for 30 minutes. To check if it is baked well, insert your tester into the center of the cake. It should not come out entirely clean, but instead have small pieces of residue from the cake.
    Leave the cake in the mold for 3 hours to cool.
    After cooling, your cake is ready take out of the mold and be placed on a plate where you can sprinkle it with a layer of cocoa for decoration and added taste!
